White Wine Winiveria Mtsvane 2019. The Winiveria winery, opened in 2005, is part of a large complex of Chateau Mere, located near Telavi, in the village of Vardisubani, an hour’s drive from Tbilisi. The castle was built in 2011 by Giorgi Piradashvili. The complex, in addition to the cellars, includes a hotel, restaurant, bar, and congress hall. Winiveria wines are produced according to two technologies: the modern European one and the ancient Kakhetian one (using underground qvevri jugs). The grapes for vinification are harvested in specially selected vineyards, where the age of the vines is not less than 25 years.

White Wine Soellner Wogenrain Gruner Veltliner 2019. Toni and Dani Soellner work a small number of plots in the hills of Donauland which look out over the Danube river valley. The Soellner family have a passion for the natural environment and follow biodynamic agricultural practices in their vineyards. The estate has also been classified as organic by the Austrian government since 1997. Their vines are planted on terraces on silty loess soils which give a distinctive minerality and pure character to their wines. The Gruner Veltliner grapes used for the Wogenrain are picked by hand and undergo a slow fermentation in temperature controlled tanks to preserve varietal character and freshness. The wine is then matured for a short time in oak barrels and kept until the spring in stainless steel tanks to allow it to settle before bottling. The result is a buzzy and crisp white wine that showcases the pure, clean character of the Gruner Veltliner variety. On the nose there are delicate aromas of lemon zest, white flowers, dry herbs and ripe peaches, while the palate offers a mouthwatering freshness, light body and saline minerality. A great choice to drink with leafy green salads, herby roasted chicken or asparagus risotto.

White Wine Woodlands Wilyabrup Valley Chardonnay 2019. No need to decant it, but best to open it half an hour before service. Woodlands is a small family-owned business founded by David and Heather Watson in 1973, in the Wilyabrup Valley. Today the company extends over 10 acres and is one of Margaret River’s most important producers. The grapes are grown organically and, in the cellar, they are selected with extreme care. A small part of the grapes is pressed in whole bunches, to add finesse and structure. The wine is then fermented in the best French oak barrels, of which 20% are new. The Wilyabrup Valley Chardonnay is a bright wine with a brilliant straw yellow color. The nose is complex and intriguing, with hints of yellow fruits, quince, pear and peach, tropical notes of pineapple, and mineral flint resulting from the fermentation in barrique. On the palate, the fruity notes return with juicy intensity and the wine displays generous depth and complexity. The finish is long and elegant, with a nice minerality. A classic Chardonnay that shows excellent aging potential. It is the perfect wine for Ramen or delicious vegetarian tarts, but it can also go very well with chicken and turkey.
