White Wine Vincent Girardin Bourgogne Cuvee Saint-Vincent 2017. The Domaine Vincent Girardin is located in Meursault, in the Côte de Beaune, in Burgundy. It was founded in 1980, when Vincent Girardin, who came from a family of Santenay winemakers, began to produce wine independently from two hectares of vineyards inherited from his parents. Soon, the quality of his wines was recognized worldwide and allowed him to expand his business by focusing mainly on the great whites and reds of the Côte de Beaune (Meursault, Puligny Montrachet, Chassagne Montrachet, Saint Aubin, Santenay, Savigny Les Beaune, Aloxe Corton, Volnay and Pommard). In 2012 Vincent Girardin sold his business to Mr. Nié, Président de la Compagnie des Vins d’Autrefois in Beaune. The Cuvee Saint Vincent Blanc comes from 100% Chardonnay grapes. The 35-year-old vines, located in the Côte de Beaune regional appellation area, grow on clayey limestone soils. The grapes are pressed, then decanted and the must is placed in 500-liter French oak barrels in which fermentation takes place. Refinement lasts 10 months on the lees. One month before bottling, the wine is placed in stainless steel vats for blending. The wine shows intense aromas of white fruit, peach, jasmine, and some hints of citrus. In the mouth it is lean and sharp, fresh, and delicately mineral. It is ready now, but can stay a bit longer in the cellar. Have it with white fish served with a white sauce, or with poultry.

White Wine Whitehaven Pinot Gris 2017. Decanting time: Upon opening, or after an hour or two. Featuring a rich, straw-like colour with a green hue towards the edge of the glass, this wine offers a bright, delightful bouquet of ripe, white pear, peach with cardamom, almond, and jasmine undertones. The inviting flavours expose a gentle, delightful combination of fruity and nutmeg and cinnamon spiciness, with just the perfect, intriguing undertones of minerality and the smoothness of mead and ripe figs. Warm and balanced, with flavours and depth characteristic of the wine’s varietal and region. Creamy and rich on the palate. Clean, lingering, and persistent finish. This full-bodied wine is well-balanced and can be enjoyed now. If you cellar the wine for a year, the wine will reward you with even more texture and complexity. Serve chilled with food, preferably smoked salmon, grilled artichokes and mushrooms, or light game. White Wine Winiveria Kisi Qvevri 2017. It doesn’t need decanting but it is recommended to open it an hour before serving it. Winiveria winery is one of Georgia’s first agritourism businesses, in partnership with the stunning Chateau Mere resort. The company prides itself on producing authentic Georgian wines made using traditional Kakhetian methods dating back over 8,000 years and indigenous grape varieties. The winery seeks to continue the revival of the natural wine movement in Georgia. Kisi Qvevri is a beautiful orange wine made from the indigenous Kisi grape, grown in the vineyards around the village of Khorkheli. This grape, abandoned for a long time, was considered completely lost. Fortunately, several wineries have recently rediscovered it and now produce fine wines with the traditional Kakhetian fermentation technique. The method, which consists of a long maceration of the must on the skins and maturation in the typical terracotta pots called Qvevri, produces deep wines of great intensity. Winiveria Kisi Qvevri has a beautiful amber color, aromas of dried apricot and peach, and very pleasant spicy notes. In the mouth, it is soft and dense with a round and full taste and well balanced freshness. The wine goes well with stewed or cooked meats. But it can also be an excellent accompaniment to a platter of aged and goat cheeses.
