White Wine Tony Bish Zen Chardonnay 2019. Tony Bish is one of the most dedicated producers of Chardonnay in the world. He has spent the last 30 years continuously reinventing the Burgundy grape, leading to the establishment of his winery, Tony Bish Wines, in 2013. The headquarters for Tony Bish Wines is found in Hawkes Bay and is home to the only egg-shaped fermenting casks in New Zealand. It’s an unusual method that Tony picked up in South America, which allows for more yeast-to-wine interaction, and minimal human interference. It began with concrete eggs, but this Zen Chardonnay is the first hatching from something slightly different, called The Ovum”. This is a giant, egg-shaped, French oak fermenting cask, made by Taransaud and the first of its kind in the Southern Hemisphere. The Zen Chardonnay is Tony Bish’s ultra-premium wine, packed to the brim with aromas of lemon peel, peach, roasted hazelnuts and soft buttered bread. The palate is detailed, with subtle spices, pure fruits and an elevating acidity. It is perfect for Chardonnay lovers who want to taste a brilliant and utterly unique expression of the grape. White Wine Torre dei Beati Giocheremo Con Fiori Pecorino 2019. The name of this stunning estate comes from a 14th century fresco in the local church which depicts the Tower of the Blessed” or Torre dei Beati” where good souls go on Judgement Day. This small family-run winery was founded in 1999, although Rocco first planted a vineyard here in 1972. The entire estate is farmed organically and they have 21 hectares of vineyards set at 250-300 metres of altitude close to the majestic Gran Sasso massif and just 25km from the Adriatic Sea. This creates ideal conditions for producing exceptional wines thanks to the sunny summer days, warm sea breezes, and cold mountain air especially at the end of the growing season when Gran Sasso is covered with snow. These factors help to produce perfectly ripe grapes while preserving freshness and delicate aromatics. This elegant Pecorino white features a label painted by the young daughter of owners Adriana Salasso and Fausto Albanesi, while the whimsical name translates as we will play with flowers”. Made in a refreshing unoaked style, this playful wine is bursting with honeysuckle, citrus, orchard fruit and hints of wild herbs.
