White Wine Staglin Salus Estate Chardonnay 2017. Staglin Estate is a family-run winery founded in 1985 by the Staglin family with the aim of producing wines with a distinctive character, thanks also to the help of the viticulturist David Abreu. The estate, located at Rutherford Bench in Napa Valley, actually dates back to 1868 and the Staglin Family sees themselves as the latest generation in a long historical line of administrators. The vineyards are organically cultivated and produce wines closely linked to the territory, in a state-of-the-art underground production plant. Salus Estate Chardonnay is produced according to traditional Burgundy winemaking techniques, always respecting the unique quality of the fruit. The grapes are selected by hand, pressed and left to ferment in casks. Acidity and freshness are preserved by limiting malolactic fermentation. The wine is then left on its lees for ten months in large-sized barrels to optimize its aromatic freshness and roundness. This quintessential Napa Chardonnay has a brilliant golden color. It is rich, complex and powerful, with aromas of ripe apple, apricot kernel, orange blossom, honey, mint, peach, and spices. The full ripeness of the grapes is manifested not only in the body of the wine, but also in its alcohol content. Try it with pork, salmon, or tuna.

White Wine Staglin Salus Estate Chardonnay 2017
White Wine Tenuta di Castellaro Malvasia delle Lipari 2017. This gorgeous dessert wine is the traditional produce of Lipari, a small volcanic island off the north coast of Sicily. With 20 acres dotted across the island, Tenuta di Castellaro is the island’s largest producer and seeks to work in harmony with nature wherever possible by farming their vineyards organically and using gravity instead of pumps to move the wine around the winery. To create this delicious sweet wine the indigenous Malvasia delle Lupari grapes are grown at an altitude of 150 metres above sea level and harvested by hand. The grapes are then left out in the sun to dry out for 15 days to concentrate the flavours and sugars. The fruit is pressed and then allowed to ferment naturally in oak barrels over the winter. After 12 months of ageing in the barrel the wine is then bottled and aged for another 12 months before release. Lusciously sweet with perfumed notes of dried figs, apricots, and honeysuckle, this elegant Malvasia is best served chilled in a small glass as an accompaniment or alternative to dessert. On the palate there’s a rich sweetness balanced by a gentle streak of acidity and a long finish reminiscent of flower nectar and dried fruit.

Traditional winemaking techniques have been handed down from generation to generation. Expert winemaker Kakha Tchotiashvili creates his own vineyards with expert scientific knowledge. Thanks to the unique geographical conditions, first-class Georgian wines are created. The vineyards are located in Kakheti, considered the best wine region in Georgia. All the company’s wines are fermented and aged in typical terracotta containers, the so-called Qvevri. Each bottle is numbered and signed for approval by the oenologist Kakha Tchotiashvili.Obtained from the ancient and rare grape variety Chitistvala, the must was left to macerate with skins in Qvevri for six months. The wine has a beautiful golden color with honey reflections. On the nose, it surprises with stone and tropical fruits that recall the scents of summer. In the mouth, it is light and mineral with soft tannins and a long finish.Try it with a cheese plate or a traditional Georgian vegetarian recipe such as Nigvziani Badrijani (eggplant rolls stuffed with walnuts).
