Quintodecimo’s Fiano Exultet is one of the extraordinary wines of Professor Luigi Moio, a central figure in the enological Renaissance of Southern Italy. It is a wine of great value, produced with Fiano D’Avellino grapes from a single vineyard located in Lapio with very low yields. Thanks to fermentation in steel and oak barrels at 14-16 ° C, Fiano Exultet offers the most of the minerality and the great aromatic range of Fiano, but goes beyond the simple typicality and takes on the characteristics of great Italian white wines. It has a bright yellow color with greenish reflections. The aromatic bouquet presents the characteristic vegetal hints of acacia, thyme, and lime and then honey, sage, yellow peach, and hazelnuts. In the mouth, the notes of ripe white fruit return with good freshness and great minerality. It is a soft and warm wine, endowed with great harmony and elegance. White Wine Quintodecimo Giallo d’Arles Greco di Tufo 2021. No need to decant but best to open it half an hour before service. Founded in 2001 in Irpinia by prof. Luigi Moio and his wife Laura, the Quintodecimo winery produces white and red wines of extraordinary value, elegant and long-lived that are a great expression of their terroir. Professor Moio, a key figure in Southern Italy enology, comes from a Campania family of wine producers, who in the 1950s relaunched the famous Falerno, the wine loved by the ancient Romans. The Giallo d’Arles Greco di Tufo DOCG is one of the crus of the Quintodecimo winery, produced with grapes sourced from the vineyard located in Tufo. It owes its name to Van Gogh, the favorite painter of Prof. Moio, and to the favorite color of the painter during the period he spent in Arles, a French town in Provence, lying on the banks of the Rhone. The wine ferments in small oak barrels and does not undergo any clarification intervention. It is a powerful, rich, and refined wine with a beautiful old yellow-gold color. The nose reveals notes of apricot and quince jam, combined with distinctive hints of minerality. On the palate, it is fresh, intense, and concentrated but also elegant and endowed with great persistence. White Wine Rocca di Frassinello Vermentino Maremma Toscana 2021. This fresh and juicy Vermentino comes from the famous Rocca di Frassinello winery. The project is a joint collaboration between Castellare di Castellina and Domaines Barons de Rothschild, combining French expertise with local knowledge of the region’s traditional grape varieties. The winery was created by bringing together five local farms to create a magnificent estate of 500 hectares which specializes in crafting worldclass wines from both indigenous and international grape varieties. The fruit for this lively and enigmatic white is harvested at optimal ripeness from some of the winery’s best plots for Vermentino. The grapes are then fermented and aged in stainless steel tanks to preserve plenty of freshness and delicate aromatics for 6 months before bottling. Bursting with zingy lemon, ripe orchard fruits and enticing notes of almond blossom and jasmine on the nose, this elegant white is a great choice to serve as a delicate aperitif or a partner for grilled fish. On the palate there is a refreshing acidity, light body, and pure, clean finish. The natural salinity of the Vermentino also makes it a good match for oysters, hard mature cheeses, or Greek salads.
