White Wine Passopisciaro Passobianco 2020. No need to decant. Passopisciaro is the Sicilian winery developed by Andrea Franchetti, located in the homonymous hamlet of Castiglione di Sicilia, in an uncontaminated and wild landscape, where the rows of vines grow in harmony with nature and are lost behind the hills, surrounded by black volcanic soils. The 26 hectares of the very old vines of Passopisciaro, trained as a sapling, develop between 550 and 1000 meters on very different soils. Each plot is raised separately and follows different growth processes to bring the grapes to maturity. Unlike most of the Etna white wines, usually produced with the autochthonous Carricante, Passobianco is produced with 100% Chardonnay. The harvest is carried out meticulously by tasting the grains to ensure full and homogeneous ripeness of all the clusters, harvesting only small portions of the vine per day. The result is a rich, fresh, bright, and multifaceted wine. Its complexity is due to the combination of light conditions, temperature range, high altitude, and volcanic soil that are found only on Etna. The color is intense straw yellow. On the nose, the wine is elegant, with notes of yellow fruit, tropical fruit, and sweet sensations of honey and delicately toasted. The good body, and the pleasant fresh closure with savory and mineral notes typical of the volcanic terroir, make it the perfect partner for fish soups and white meats.

White Wine Pelter Chardonnay 2020. Serve well chilled. The Pelter family have been involved in agriculture since Sam Pelter emigrated from the United States to Israel in 1970. The passion for wine came with the second generation when Sam’s son Tal Pelter went to study winemaking in Australia. Upon his return he began making wine with his brother Nir. The modern day Pelter winery was established following the family’s move to the Golan Heights where conditions are perfect for premium winemaking thanks to the high altitude vineyards. This charming Chardonnay is crafted from fruit from two vineyards in the Golan Heights and Mitzpe Ramon. The different characteristics of these two areas help to create a complex, multi-layered wine with plenty of ripe tropical fruit and an elegant minerality on the long finish. The grapes are harvested by hand to ensure they arrive at the winery in top condition and the wine is fermented and matured in stainless steel tanks to preserve varietal purity. Guava, mango, honeydew melon and hints of bitter almonds define the aromatic nose while the palate offers plenty of ripe stone fruit, citrus, and a subtle stony minerality. This vibrant flavour profile makes this wine a great aperitif or partner for seafood, grilled fish, spicy Asian curries and salads, or leafy summer salads.

White Wine Pelter Sauvignon Blanc 2020. Serve well chilled. Sam Pelter emigrated from the US to Israel in 1970 and set up a farm in Tzofit before the family relocated to the Golan Heights in 2005. The Pelter family only began making wine commercially when Sam’s son Tal returned from Australia full of inspiration from his winemaking studies there. Today the winery crafts delicious Israeli wines which express the exceptional terroir of the northern Golan where the hot, sunny days are moderated by cool, fresh nights. The grapes for this crisp and refreshing Sauvignon Blanc come from the magnificent Haruach Vineyard in the Golan Heights which is 1100 metres above sea level. Conditions here are ideal for making light bodied, vibrant white wines since the big temperature difference between the day and night preserves freshness and aromatics in the grapes. To show off the character of the variety the grapes are fermented in stainless steel tanks and left there to mature for 3 months before bottling. This creates an elegant and vivacious Sauvignon Blanc that’s bursting with fresh cut grass, lime, honeydew melon and plenty of lemon zest. The palate is zingy and light with hints of tropical fruit, citrus, and stone fruit as well as undertones of dried Mediterraean herbs and hay.
