White Wine Matar Sauvignon Blanc Semillon 2020. Serve well chilled. Tal Pelter grew up on his father’s farm in Israel which he had founded in 1970 after emigrating to the country from the USA. After spending time studying winemaking in Australia, Tal returned to his homeland to found Pelter winery in 2005 with his brother Nir in the Golan Heights. In 2012 the two brothers were inspired to begin a brand-new project, Matar, which crafts top quality kosher wines from fruit sourced from Israel’s top terroirs. This elegant kosher white is a blend of Sauvignon Blanc and Semillon which interprets this classic Bordeaux-style composition with distinctive Israeli flair. The grapes are harvested by hand from selected vineyards in the Golan Heights and Upper Galilee, They are pressed in whole bunches and the must is fermented in temperature-controlled stainless steel tanks. The wine is then aged in the tanks for 3 months before bottling to preserve plenty of acidity and aromatics. Crisp lemon, stone fruit and subtle hints of white flowers define the nose while the first sip reveals a refreshing acidity, light body and elegant finish. The graceful flavour profile makes it very easy to drink as a vibrant aperitif or partner for pan-fried fish, fresh seafood, sushi, leafy salads, or spicy Asian dishes.

White Wine Matetic EQ Sauvignon Blanc Coastal 2020. Located in the valley of El Rosario just 15km from the Pacific Ocean, Matetic is a family-owned Chilean winery which specializes in producing delicious New World wines according to organic and biodynamic principles. The family emigrated to Chile in 1892 from the Croatian coast and established a successful sheep farm in Punta Arenas before moving into winemaking in 1999. Today they apply their extensive knowledge of the local terroir and agriculture to growing top quality grapes in a variety of different appellations. This vibrant Sauvignon Blanc begins life in the Valle Hermoso” or Beautiful Valley” which is just 9km from the Pacific Ocean. Here the vineyards sit on the slopes where they enjoy great sun exposure as well as cooling breezes from the Pacific Ocean. Once in the winery the grapes are primarily fermented in stainless steel tanks to preserve varietal typicity with 30% fermented in concrete eggs and neutral oak barrels. The young wine ages on the lees for 4 months before bottling and release. The result is a zippy, mouthwatering white which immediately reminds of the sea with hints of salty minerality, bright citrus and tropical fruits like papaya and mango. On the palate there is ample freshness as well as ripe fruit notes and a salty minerality on the finish.

White Wine Michele Chiarlo Le Marne Gavi 2020. The Chiarlo family have been making exceptional Piedmontese wines since 1956 from their 60 hectares of vineyards which include many of the top crus for Barolo and Barbaresco. They also have access to some 50 hectares owned by partner growers who they have been working with for many decades. Today the estate is run by Michele’s sons, Stefano and Alberto, who continue their father’s legacy by focusing on traditional winemaking techniques and sustainable practices. The fruit for this elegant Gavi is sourced from vineyards close to the town of Gavi set on high hills. Just a few kilometres to the south is the Ligurian Sea, which along with the Apennines to the west helps to create a special microclimate for premium white winemaking with regular cooling breezes from the sea and mountains. The Chiarlos always harvest their grapes manually to ensure top quality, and once in the winery they are fermented at a low temperature in stainless steel tanks. The young wine is then left to settle on the lees for 3-4 months before bottling, creating a vibrant and refreshing white wine with plenty of mouthwatering acidity and enticing citrus and apple notes.
