White Wine Livon Sauvignon Blanc 2020. The Livon winery was founded in 1964 by Dorino Livon who sold lumber to afford to buy his first vineyards here in Collio close to Italy’s border with Slovenia. Over the years he purchased additional vineyards to add to the property when he was able, and also built a state-of-the-art winery. Today the estate is still in the hands of the Livon family who now specialise in making quality white wines that offer exceptional value for money. This delicious Sauvignon Blanc is sourced from select vineyards in Dolegna del Collio which grow on clay marl soils. The grapes are carefully harvested by hand to ensure they arrive at the winery in perfect condition. The juice is fermented in temperature-controlled stainless steel tanks to showcase the natural purity and freshness of the Sauvignon Blanc. Before bottling the young wine is aged on the lees for 5 months to add structure and a smooth texture. The nose is bursting with classic Sauvignon aromas like green apple, fresh-cut grass, and herbaceous notes. The first sip reveals a refreshing acidity, light and elegant body, and a balanced finish with subtle mineral notes and lingering orchard fruit flavours.

There’s a lingering sensation of vibrancy on the finish and a touch of residual sugar which makes this a great aperitif or match for spicy Asian dishes.
