White Wine Iago Chinuri 2021. Iago Bitarishvili is a Georgian winemaker of great intellect and ability, the first to have obtained biodynamic certification in his country. In his small vineyard of about two hectares, in the village of Chardakhi, in the Kartli region, on calcareous soil, he meticulously cultivates the ancient native vine called Chinuri. The vinification process is carried out traditionally. The harvest is entirely manual and the pressing is done with the feet in wooden presses (locally called Satsnaheli). The grapes are then macerated on their skins for 6 months. Maceration is followed by spontaneous fermentation with natural yeasts in amphora. The final wine is left unclarified and unfiltered. Production is limited and amounts to about 2000 bottles. The Iago Chinuri shows a beautiful deep golden color. On the nose, it releases strong aromas of fresh fruit and sweet spices, with traces of menthol and hydrocarbon. On the palate, the wine is energetic and lively, with an important acid backbone, accompanied by a soft component that makes it well-balanced and extremely pleasant. It goes wonderfully with appetizers, fish first courses, white meats, and vegetarian preparations.

White Wine Inama Vin Soave Classico 2021. Decanting time: 2 hours. Made from 100% Garganega grapes, this delicate wine is a light straw-yellow color blending with glimmers of greenish yellow along the rim. The Inama family has a 40 year history in wine production in Veneto, and the consistency of organic processes and old vine cultivation provide the backdrop for a truly superb product. In the glass, the clean, powerful nose lead with sweet wildflower aromas of chamomile, iris and elderflower to slowly reveal tropical fruit, hay and bright citrus undertones with correspond expertly to the round, crisp mouthfeel. Hints of apricot, honey and nectarines coat the mid-weight palate, drawing out a floral touch of sage. Also present on the palate is a delightful, stone-like mineral note. A succulent, dry white, this wine has a rich and well textured presence that is full of personality and character. While intense and flavorful, it is a well-balanced wine. Uniquely delightful and a little perplexing, notably in the lingering, complex, finish, unearthing rising flavors of sweet almond and pear. There is excellent value in this high quality Soave Classico, as its possess a level of complexity and length that is rare at this price point. White Wine La Scolca Etichetta Bianco Gavi 2021. La Scolca has been in the hands of the same family since 1917 when the great-grandfather of current owner Giorgio Soldati purchased the estate. The winery is rightfully famous across the world for its benchmark Gavi wines like this stunning Etichetta Bianco” or White Label”. Made in a traditional style, this youthful and exuberant white wine is made with top quality Cortese grapes from the steep slopes of the so-called Grand Cru” of Gavi, Rovereto. The grapes are carefully harvested by hand and then vinified according to typical local practices in temperature-controlled stainless steel tanks to preserve freshness and the typical aromatics of the grape variety. The wine is then allowed to settle over the winter, spending 4-5 months ageing on the lees to add complexity and a creamier texture before being bottled in February. The result is a crisp, mouthwateringly refreshing white wine which is bursting with delicate citrus, honeysuckle and white blossom notes. The first sip reveals a light body, bright streak of acidity and a pure, clean finish.
