White Wine DoReMi Mtsvane 2020. The DoReMi winery was established in 2012 by two wine loving friends with the aim of creating the finest organic wines using ancient Georgian techniques. The grapes are collected from vineyards located in different areas of Georgia. The wines are fermented on the skins and with wild yeasts. No additives are used. They are then aged in Qvevri, traditional terracotta pots used in Georgia, according to an ancient local method that dates back to 8000 years ago. Mtsvane is an old Georgian white grape variety that originates from the east side of Georgia, in the famous Kakheti wine area. Maceration on their skins only lasts three days, instead of the usual multiple months, which results in light, and delicate tannins. The wine shows a beautiful amber color. The nose is charming with aromas of ripe yellow fruits and white flowers, a hint of honey, and then Mediterranean herbs such as thyme and sage. In the mouth the fruity expression is intense, with a salty note on the finish. The wine is light and fresh, elegant and harmonious. It will pair perfectly with grilled chicken and any medium-aged or smoked cheese.

White Wine DoReMi Tibaani 2020. Founded in 2012, the DoReMi winery is located in the Kakheti region, along the right bank of the Alazani River. The wines are all made from native Qvevri grapes, which are large hand-made inground clay vessels used to ferment and age wine. Qvevri can range in size from 250 liters to 2500 liters. The lightly squeezed must is fermented with the skins, with wild yeasts and without any additives. At the end of fermentation, the Qvevri are sealed and covered with earth until spring. During the process, the solids in the wine slowly sink to the bottom of the Qvevri and the clear wine rises to the top. The DoReMi Tibaani is 100% Rkatsiteli wine. Grapes are grown in the historically important Tibaani region, one of Georgia’s recognized appellations. The nose of this amber wine is characterized by the most beautiful floral tones, wildflowers and fresh herbs, with some final tart honey aromas. On the palate, there is fresh pear, mirabelle plum, and apple tart. The fine acidity and beautifully integrated tannins give the wine a stable backbone. It is elegant and extremely drinkable. Try it with crayfish, crab, grilled white fish, or rabbit terrines.

White Wine DoReMi Tsolikouri 2020. DoReMi is a Georgian winery located in the historic Kakheti wine region, founded in 2012 by two friends who are passionate about wine. Their organic wines, all made from local grapes, can be divided into two main groups, the Kathetian wines and those coming from the hinterland of Kartli and Imereti. The former are fermented and aged in Qvevri, which gives them a particularly clear expression of its body and tannic backbone. The latter, on the other hand, are mainly characterized by varietal delicate aromas of fruit and floral tones. The DoReMi Tsolikouri is an amber wine produced from the homonymous indigenous grape variety, coming from the Imereti area. On the nose, the wine shows light and pleasant aromas of grapefruit, yellow wild plum, wild flowers, and delicate mineral notes. The wine is balanced and soft with refreshing acidity and velvety tannins. Despite the light body, a rich range of fruity flavors can be tasted, especially citrus and yellow plum. The wine has a soft and long finish. It is the perfect companion for cheese pies and tarts, mushroom risotto, and fish and chips.
