Domaine Henri Boillot is located in Meursault and owns vines in the Puligny-Montrachet and Volnay appellations. Since 1885, the Boillot family has been at the head of the 19-hectare estate. In white, Chardonnay covers 7 hectares in Meursault, Corton-Charlemagne or Puligny-Montrachet. In red, Pinot Noir grows in the Pommard and Volnay appellations. Henri Boillot is in charge of the vinification of the estate’s whites. For the rest, his son, Guillaume Boillot, took over. The Clos de la Mouchère vineyard covers four landlocked hectares in the premier cru Les Perrières: an exceptional terroir that produces a deep and mineral Chardonnay. The 14 months’ aging in the barrel gives the wine structure and density. This Puligny-Montrachet 1er Cru Clos de la Mouchère Monopole is a first-rate Chardonnay. The nose is very elegant with white flowers, ripe fruit, and a touch of spice. In the mouth, the wine is deep and powerful, ideally combining richness, minerality, and lively acidity. It is a wine of rare concentration with an exceptional aromatic profile. Try it with lobster, poultry or fish served with white sauces.

White Wine Domaine Heitz Lochardet Chassagne Montrachet Premier Cru La Maltroie 2019. It is recommended to decant the wine for a half an hour. The Heitz family has cultivated vines in Burgundy since 1857, but traditionally sold its fruit to the négociant Joseph Drouhin. After graduating in Oenology in 2011 and taking the reins of the company, Armand Heitz started producing wines with the 2012 vintage. The Domaine currently covers 4 hectares, spread over 5 appellations in the Côte-de-Beaune. The vineyards, under the guidance of Ludovic Pierrot (of Domaine Leflaive), are organically cultivated and more recently viticulture has been carried out in full compliance with biodynamic standards. Yields are naturally contained at low levels and the grapes are harvested manually. The wines, both red and white, are fermented in wood with whole bunches intact. They are then racked into barrels for an aging period of 11 months. In the glass, the wine has a light yellow color. The nose is fresh with aromas of white flowers, honeysuckle, white peach, and slightly smoky notes. On the palate, it has a superb roundness and an impressive balance. Far from the stereotype of opulent and aromatic Chassagne-Montrachet, this great wine is taut and mineral, of great purity and brightness. It is ready to be drunk now but may benefit in terms of complexity from further refinement in the bottle. The finish is pure and tasty. Enjoy it with baked bluefish, prawns, and Comte cheese.

White Wine Domane Wachau Riesling Amphora 2019. Domaine Wachau is one of Austria’s top premium white wine producers and the only winery to make wines representing all of the Wachau’s most prestigious crus. It functions as a large cooperative with more than 440 hectares of vineyards in the Wachau owned by its members. Their top vineyards include Achleiten, Kollmitz, Loibenberg and Tausend-Eimer-Berg, with the majority planted on steep terraces flanking the Danube river. The challenging conditions in these vineyards help to produce low yields of intense, concentrated fruit with a distinctive elegance and poise thanks to refreshing acidity levels. This unusual bottling is crafted from sustainably and organically-grown fruit that is fermented spontaneously with wild yeasts. After six months of maturation in clay amphora vessels the wine is then bottled without any added sulphur. Beeswax, honeydew melon, and tropical fruit notes dominate on the nose while the palate is well-rounded with ample ripe stone fruit balanced by zingy citrus freshness. The finish is graceful and clean, with gentle notes of marzipan, dried herbs and cedar that linger on the tongue. A great savoury wine to pair with a huge range of dishes from herby roast chicken and spicy Asian curries to a rich lasagne or moussaka.
