White Wine Acustic Celler Acustic Blanc 2017. Serve well chilled. Expressive aromas of white peaches, thyme, fennel and lemon zest awaken the senses, while the vivacious palate offers racy freshness, a well-rounded mouthfeel and intense apricot and citrus flavours. The fine balance between acidity, alcohol and a generous full body makes this an excellent partner for salmon tartare, steamed cockles or a typical local Catalan dish of salted cod served with vegetables. The Acustic Blanc is a versatile white wine with a multifaceted, complex personality thanks to the four different grape varieties that make up the blend. The dominant variety is Garnacha Blanca, which helps to give a rounded, creamy texture to the wine, followed by Macabeo and a drop of Garnacha Tinta and Pansal which is also known locally as Xarel.lo. Winemaker Albert Jané sources all of the grapes for this distinctive white from 35 to 80 year old vines planted across the Montsant wine region. Here the intense arid climate, organic farming and poor soils help to produce incredibly flavourful fruit that Albert harvests by hand. He then ferments 70% of the wine in stainless steel tanks and the remaining 30% in new French oak barrels before ageing the wine on the lees for 4 months to add extra complexity.

White Wine Sequoia Grove Chardonnay 2017. Vines were first planted on the Sequoia Grove property in 1865 and the building which houses the tasting room today dates back to 1908. In 1979 the modern-day winery was founded by James Allen and his wife Barbara and later sold to the current owners, the Kopf family, in 2002. Sequoia Grove’s 24-acre Estate Vineyard and 50-acre Tonella Ranch Vineyard are set in the heart of Rutherford, one of Napa Valley’s finest sub-regions for opulent reds and refined white wines. Thanks to a warm climate and long sunny summer days tempered by morning fogs, Sequoia Grove’s vineyards produce deliciously ripe grapes with plenty of balancing freshness. Grapes are harvested by hand, carefully sorted and then fermented in oak barrels. To add extra complexity and body the young wine is then matured on the lees for 8 months with regular lees stirring. The result is an award-winning Chardonnay opens with zesty aromas of lemon, lime and pear along with toasted almonds. The first sip reveals a crisp freshness, full body and invigorating stone fruit flavours seasoned with notes of brioche, nutmeg and vanilla. The punchy flavor profile makes this a great partner for roast chicken, creamy risottos, and pasta dishes.

White Wine Allimant Laugner Riesling 2017. Alsace is known for its mouthwateringly crisp Riesling wines like this example from Domaine Allimant-Launger. The domaine was founded in 1965 after the marriage of Mariette Allimant and René Laugner who were both members of Alsace’s top winemaking families. Today the estate is in the capable hands of Hubert Laugner, an 11th generation winemaker whose family have been growing grapes here since the 1500s. Domaine Allimant-Launger has 12 hectares of hillside vineyards planted along the Rhine River on top quality limestone and clay soils. These growing conditions are ideally suited to the Riesling grape which Hubert Laugner uses to craft this stunning white. The warm summer days help to ripen the grapes while cooling breezes from the river help to preserve plenty of freshness and aromatic character in the finished wine. On the nose there are subtle hints of orange blossom, green apple, and zesty citrus while the first sip reveals a bright acidity, light body, and enticing pear, stone fruit, and honeyed notes. The pure, clean flavour profile makes it ideal as an aperitif or an excellent partner for spicy Asian dishes, leafy salads, and fresh seafood like oysters and prawns.
